Santo De Piedra Mezcal Joven
Mezcal magnificence. Santo de Piedra was born in San Bartolo Yautepec, just outside Oaxaca. The area around this little village is known for wide variety of fruit that grows there and the abundant wildlife. Somehow that fruitiness finds its way into the Mezcal, which displays peach, apricot, grapefruit, tangerine and guava, alongside notes of orchard blossom, smoked peppercorns and leathery biltong. The fauna doesn’t find its way into the Mezcal, but coyote, armadillo, ocelot and wild boar all run between the 10-year-old Espadín agave plants used to make it. With the agave taking so long to mature, each bottle takes over 3,500 days to make, which is getting into single malt whisky territory. And the quality and smokiness are comparable too. The agave hearts are roasted over wood, and the liquor is twice distilled in a copper pot still. This Agua Piedra Mezcal Santo De Piedra Mezcal Joven is made in tiny batches of 100 bottles, each of which is handmade using recycled glass, then numbered and signed so you know exactly when and where it was made, and by whom.
