This special edition release is a follow-up to the much-raved-about Valkyrie. Peatier than most expressions of Highland Park, Valknut is made with a small amount of Orkney-grown Tartan barley, which heightens the smoke and sweet spice, and it has been aged in American oak barrels seasoned with sherry. The bottle has been created by a Danish designer called Jim Lynvgild who has Viking blood coursing through his veins and can trace his family lineage to the 1st Earl of the Orkney Islands and beyond. Jim Lynvgild – who lives in a Viking-inspired castle and is a part owner of the Frejdhal brewery that has collaborated with Highland Park in the past – has taken inspiration from Nordic Stones in Gotland, Sweden. As legend tells it, the Valkyries flew over the battlefields marking the bravest fallen warriors with the Valknut – the knot of those killed in battle. Those chosen few were whisked away to Valhalla to join Odin and prepare for Ragnarok – a battle to end the world and prepare it for rebirth. The whisky is equally as legendary, as vanilla pods, smashed black peppercorns, charred logs, thyme, sawdust, sandalwood, star anise and peat smoke do battle with festive flavours of clove, cinnamon, orange peel and gingerbread. We’ve definitely marked this as one of the chosen ones, but with its extra smoke, it’s only for the brave. Based in Kirkwall, this legendary Orcadian is Scotland’s most northerly distillery and one of only a handful to still employ traditional malting floor.
