Have you experienced “Rum Funk”? Well, you’re about to, and it’s a booming trend that should be on the lips of any rum lover. Jamaican rum is often described locally as having “hogo”, derived from the French term haut goût, or high taste. Thought to derive from the pot still and the recycling of dunder – the liquid left in a boiler after distillation used to kick-start the yeast in the next batch – this is the characteristic meaty and nutty pungency reminiscent of barbequed pineapple, overripe banana and wild game meat. Similar to the term ‘rancio’ used to describe fine wine, this funk is much sought-after in the rum world. And that’s what Plantation have created in Xaymaca, the name given to the island of Jamaica by the first inhabitants: the Arawaks. Young rum is made and aged in Bourbon casks in Jamaica, before being shipped to Chteau de Bonbonnet, the home of Cognac masters Maison Ferrand, where they are further matured in ex-Cognac casks and then blended with a 17-year-old Jamaican rum. The result is chewy and complex, with notes of smoked meat, tropical fruit, vanilla, roasted plantain, flambéed pineapple, coconut milk, pecan pie, apricot tart, spices, marmalade and tangy preserved lemons. Sip this funk rum neat to fully appreciate its depth or mix into a Collins with fresh lemon and soda water. In the late 1980s Alexandre Gabriel of the Cognac house Maison Ferrand set of on an adventure, he was scouring the Caribbean in search of the region’s finest rums.
